Evil is a relative term. I could argue that capitalism is evil, or buying things that can’t be recycled, or Catholicism. Maybe start with asking yourself how you justify doing things someone else might think of as evil before using it as some sort of magic bullet argument.

I’m a guy. Most of my jobs have been related to cleaning up after people who were too busy, self important, or incompetent to do their work the right way and instead leave it for someone else to fix before it goes out to the client.

I think that the reviewer is missing the point that this is still just no man’s sky with a few tweaks and a different set of inputs. I look at this and the bones of no man’s sky are plain to me, the flesh there to see, just… tweaked.
It’s fair to expect that all the lessons learned from no man’s sky will probably be applied here.

It all depends on why you are a vegan. If you are trying to minimize harm, will discarding the sour cream reduce the harm? In this case no, so I say eat it. Personally I find it worse to just toss it because then it is also a waste. Will not being more careful in the future to be sure they get your order right cause harm? Potentially. I’d put your effort there… Kindly.
If it is for health reasons, you have to weigh the potential damage of eating it. For most people the risk is small and scraping it off would be fine. For a severe allergy, that wouldn’t be sufficient.
Trust yourself. There are a ton of people who will tell you how to live and they will never all agree. If you are going to disappoint someone no matter what you might as well follow your heart.
